Amaranth greens are also know as Red Callaloo. They are in the same plant family as spinach and can be cooked in a similar way. Try adding them to soups, stir-fries, stew and curries by putting full or chopped greens in your cooking pot in the last minute of cooking time. They have striking pink coloring on their leaves that is most noticeable when uncooked, and are beautiful added raw to salads.

How to Store:
Amaranth greens store longest when dry. Ideally, you could wash/dry them in a salad spinner, and then either store in a plastic bag in your fridge, or in a reusable Tupperware-type container in the fridge.
