Store in a cool, dark, ventilated space (a kitchen cabinet) for up to a month.

Recipe Suggestions:
We grow a couple varieties of beautiful, heirloom sweet potatoes. They are incredible sweet and so delicious. Sweet potatoes are quite labour intensive to harvest on a human-scaled farm (no tractors, and lots of digging!), so we grow a manageable small plot of sweet potatoes for CSA members as a special treat for just one week of the CSA.
My favourite way to cook sweet potatoes is to roast them in the oven. Wash any dirt off the skin of the sweet potatoes, poke a few holes in it with a fork, and bake at 400 degrees, until fully tender and cooked through (usually about 30-40 minutes depending on the size of the tuber). Split open, sprinkle with salt, pepper, or whatever toppings you like and enjoy!!
