Tokyo Bekana is an Asian green, and is often described as a combination of napa cabbage and lettuce. It has crunchy leaves that can be added to salads, or cooked. Try adding it to your favourite stir-fry (add at the end of cooking, it doesn’t need more than a couple minutes to cook), or sub it for napa cabbage in any recipe.
