Tomatillos are a small green-yellow fruit, covered by a papery husk. They have a vibrant, tart flavour, and are a stable of Mexican cuisine. Remove the husk from the fruit before cooking. Roasting the tomatillos will mellow their tartness and bring out their sweeter flavour. Try making some Salsa Verde to eat with tortilla chips, or to add to burritos, tacos, rice bowls, enchiladas, eggs and more!
If want to save up several weeks of tomatillos to make a big batch all together, you can freeze tomatillos: remove the husk; wash; chop, dice or leave whole and pack into a container. Frozen tomatillos can be added to any cooked dish.
